As I am sucrose intolerant I find it easier to make my own breakfast cereal than read all the ingredients on all the packets of muesli’s available in the supermarkets. This is by no means the cheaper option, but it is the healthier choice.
ingredients:
2 ½ cups rolled oats
½ cup sunflower seeds
1 cup mixed raw nuts
½ cup wheat germ.
1 tablespoon pumpkin seeds
½ cup desiccated coconut
Zest of one lemon
80mls canola oil
160mls honey
½ teaspoon vanilla extract
½ cup chopped dried fruit
½ cup raisins
½ cup cranberries
1 stick cinnamon
method:
heat the oven to 180° Celsius
place the ingredients up to and including the lemon zest into a bowl and mix
in a sauce pan heat the oil and honey
when the honey has melted remove from the heat and add the vanilla extract
mix into the dry ingredients and place onto a baking tray
bake for 40 minutes, turning the mixture over once to prevent burning
add the dried fruit, raisins and cranberries
place back in the switched off oven for an hour turning the mixture every now and then to prevent burning
store in a sealed container with the cinnamon
Cooks Notes:
I have an LG light oven and do the first baking at 160° Celsius and the drying out at 40° Celsius

Have you tried taking a Chromium Supplement? It is great for balancing the glucose levels and recommended by our doctor for Jess. I have found a great one at Dischem, 1/3rd of the price of the first ones we got. It is the Dischem Gold Range and the doctor has approved it as being the genuine stuff.
