Chinese Five Spice Powder

This is really worth making your own – as and when you need it. I use a coffee grinder as my spice grinder as it works brilliantly. Just remember, if you grind spices in it, you cannot use it for coffee.

ingredients:

5 star anise

15mls fennel seeds

15mls Sichuan peppercorns

10mls cloves

10mls ground cinnamon

method:

place the spices in a dry frying pan and heat gently

remove from the heat when you can smell the spices

grind to a fine powder

pass through a fine sieve to remove the husks
