April 2022 Showcasing In My Kitchen

April 2022 was not a good month for business in South Africa. Between the 2 days off for Easter and a public holiday on the 27th, we have 3 four day weeks. This is closely followed by the May day holiday which is why we tend to go overseas at this time of the year. However, this year we are going away in June, if everything goes to plan. Over Easter I worked on some recipes, and read two books. Dave and I spent time with Hannah and James, went out for lunch and upgraded his cell phone. All in all, very relaxing. I also managed to share a few recipes that all tie in together, plus I did some baking of course.

Savoury recipes to make a meal

Wanting to make the perfect lobster roll, I baked condensed milk rolls, made a sauce and rosemary salt and put it all together. One Saturday I made rich egg dough and spinach egg dough. All of this so I could make striped pasta to roll into shaped pasta. Totally worth the effort if you ask me. This was part of reviewing a recipe book. Always something sweet

The chocolate fudge cake lasted us a week, even with sharing a few slices at work. I made crema catalana for a family dessert and as I had an orange left over from this, I made an orange and almond cake. Not a lot of baking this month but enough to keep the sweet tooth satisfied.

One new thing in my kitchen in April 2022

When we were in The Netherlands, we stopped off at Graan & Zo in Oud-Alblas. This is a working windmill where they grind their own grains. They then make various packaged items to buy including these pepernoten. I baked them one day when I didn’t feel like baking from scratch, for us to have with coffee.

  1. Hi Tandy! I’m pretty sure your chocolate fudge cake would never in a million years last a week here, we’d be lucky to get two days dessert out of it! But with 6 people living here, I guess that’s expected! Trip to the Netherlands sounds fun! Some day we will travel. We applied (all 6 of us) for passports so eventually we can take a trip. Unfortunately, it takes at least 6 months to get back and there was an issue with the baby’s passport and they don’t want to issue it at all. Bleh!

    1. haha, I think it may just last one day on your house! That is ridiculous how long a passport can take in the US! So much for a first world country …
