This is not quite Asian Chicken Noodle Soup but I am calling it that as it has ginger and lime. And also because I have made chicken noodle soup previously for the blog.

In June I made the decision to delay my annual check up with my dermatologist, due to the virus. Despite the receptionist assuring me they were not allowing sick people into the rooms, I knew this was not enough. I am convinced many of us have had a mild version of the virus without showing any symptoms. And there was no ways they could guarantee that everyone coming in was not asymptomatic. I am glad I made the decision as July is always so cold here. Not that September was any warmer. The day before my appointment the receptionist called to confirm. And mentioned that I needed to bring my own dressing gown to the appointment. I got fixated on how I did not actually have one. And did not want to go out and spend money for something I would wear once in the Doctor’s room.

When I told my friend about this her initial reaction was “so does that mean they used the let people share gowns”. Because before the virus, there were always gowns in his rooms for his patients to wear. And never once have I considered that someone else might have had it on before me. Needless to say I shall not be using the gowns provided when next I visit a medical professional. I shall be taking something suitable from my own cupboard to wear. Not because of the virus but just because it is not a nice thought to be wearing something someone else might have worn. Do you think your Doctor should provide disposable gowns for you to wear, or will you bring your own?

Asian Chicken Noodle Soup

This soup packs a punch of flavour

Ingredients

  • 750 mls chicken stock
  • 15 mls teriyaki sauce
  • 1 cm fresh root ginger, peeled and julienned
  • 15 mls lime juice
  • 2 chicken breasts, cut into bite size pieces
  • 150 g noodles, cooked one minute less than package instructions *
  • 60 g frozen peas

Method

  • Place the stock, teriyaki, ginger and lime into a large saucepan
  • Bring to the boil over a medium to high temperature then add the chicken
  • Reduce the temperature and allow to simmer until the chicken is nearly cooked
  • Add the noodles and peas and increase the temperature
  • When the peas are hot, serve the soup
