August 2021 was a stamp your foot sort of month. It started off pretty well, but then a friend got Covid. We see a lot of him, and I had spent a fair bit of time with his wife who also got sick. Then my one staff member was booked off work with suspected Covid. The day he returned a negative result, my other staff member returned a positive one. All I can say is that I am grateful for masks, sanitising and social distancing. I feel extremely relieved we are both fully vaccinated.
Lots of sweet things in my kitchen
Moving swiftly along to all things sweet, August was a very sweet month. I made peanut butter choc chip cookies as well as chocolate fudge truffles. Hannah gave these her nod of approval. I baked lemon meringues to go with chocolate fudge ice cream. The meringues were awarded a star baker award so that was a highlight for me.

And to end off August 2021
I made only a few savoury dishes to end off the month. They were chicken spring rolls, nuoc cham and soft cheese. The Vietnamese dipping sauce is for rice paper rolls that I will share in September. and the soft cheese was another version of ricotta. I have been making quite a few batches of this using different recipes, while I work on a beetroot tart recipe.
One thing not in my kitchen
I bought this microwave mat home to use in our microwave as I thought it would be perfect. Dave told me to take it right back as it was unnecessary. Not that he paid for it! But I listened of course. He told me that the bottom rack can be taken out of our oven when I want to blitz mugs of milk for hot chocolate. The irony is that we could have used it at work to cover the soup we heat up for winter lunches. But instead he had to go out and buy a fancy bowl for that.
