Baked Ricotta Pancake For Breakfast

This baked ricotta pancake is a reminder of Sicily. It really is easy to make at home and should be served warm. I made one to serve with sweet caramelized apples and another to go with dried figs cooked in red wine. Both were excellent.

I have always been a little bit of a germaphobe. Not in the obsessive sort of way but certainly in a sense of sanitising. Other than the normal handwashing regime I make sure to wash my hands after touching banknotes. Money is not clean and years ago a customer of mine contracted TB from licking his thumb to count the cash he had been given. It is not often that I pay with cash but if I do then I use a wet wipe on my hands straight away. And if for any reason I have to use an ATM I clean my hands afterwards. I once read somewhere that ATM’s and escalators have the highest germ count. If I could avoid going on an escalator I would. But because I have a genuine fear of falling when on them.

But they cannot be avoided and I need to hold on when going up. It is for this very reason that I keep a small pack of wet wipes in my handbag. I also keep a small bottle of sanitising spray. It has 50% alcohol and I use this mostly in public bathrooms. As I cannot avoid using them I tend to spray the door handle and the toilet flush mechanism before I touch them. Sanitising wipes have also been provided in South Africa for years in supermarkets to wipe down our trolleys. This is a habit I have extended to all the shopping we do. And after coming home from the shops I have always washed my hands. And it is not that I think these habits have served me well. All I am doing is washing for longer, and using 70% alcohol wipes where necessary.

Baked Ricotta Pancake

All Rights Reserved: an original recipe from Lavender and Lime

Ingredients

For the ricotta

  • 240 mls milk (you can use UHT milk)
  • 120 mls cream (you can use UHT cream)
  • 2.5 mls salt
  • 30 mls lemon juice

For the baked ricotta pancake

  • 125 g ricotta (use store bought if you don't want to make your own)
  • 100 mls milk
  • 2 eggs, separated
  • 1 lemon, zest only
  • 60 g fructose
  • 60 g flour
  • 2.5 mls baking powder
  • 30 g salted butter
  • caramalized apples to serve

Method

For the ricotta

  • Place the milk, cream and salt into a saucepan and bring to the boil
  • Immediately remove from the heat, add the lemon juice and stir gently until it starts to curdle
  • Leave to cool
  • Line a sieve with a double layer of muslin and set over a bowl
  • Pour the curdled milk into the muslin and place in the fridge for 20 minutes

For the baked ricotta pancake

  • Preheat the oven to 180° Celsius
  • Place the ricotta and milk into a large mixing bowl
  • Add the egg yolks, lemon zest and fructose and whisk until combined
  • Add the flour and baking powder and whisk until combined
  • Place the egg whites into a mixing bowl and whisk till still peaks form
  • Gently fold into the batter, without knocking out the air
  • Place the butter into an oven proof and microwave proof pie dish
  • Melt the butter in the microwave until frothing *
  • Swirl the butter over the bottom of the pie dish to distribute it
  • Gently pour the batter into the dish and place into the oven
  • Bake for 25 minutes then remove from the oven
  • Tip out onto a serving board and top with caramalized apples

Notes

* if your dish can be used on the stove top then do this on the stove if you don't want to use a microwave.
Drizzle with honey if not serving with caramelized apples.

  1. you were ahead of your time with the sanitizing. and I agree that money is dirty. Other than leaving a tip, I can’t remember the last time I used money for something…

  2. This sounds delicious, Tandy. I have never really used hand sanitizer as it makes my hands peel and itch. I am currently using gloves and hand sanitizer only when absolutely necessary.

    1. We do an alcohol free sanitiser which should be good for you. And I don’t use gloves, but my own sanitiser when going out.
