Blueberry Ice Lollies

It is the middle of winter, and not really warm enough for these blueberry ice lollies. But I am still enjoying them as a reminder of summer. I flavoured them with juniper berries and tonic water to get the sense of having an alcohol free gin and tonic.

When Dave and I went on our honeymoon I decided what I wanted for our first anniversary from him. I had a gold shamrock charm from Ireland that my sister had given to me and I asked Dave to get me a bracelet for it. This was while crossing the River Arno in Florence on Ponte Vecchio. This is a medieval bridge with origins from Roman times and it is lined with jewellery shops. Each year Dave added a charm to the bracelet and then in 2012 I lost it. Replacing the bracelet was an easy task, but replacing the charms was not. Eventually we got 9 charms that were similar, if not the same. All except the shamrock which I could not find in South Africa. Since then Dave added ones from Venice, Paris and Edinburgh.

This year the plan was to get the 16th charm in the Marais district of Paris where we bought the Eiffel Tower charm a few years ago. Eric and Bev were going to Ireland after France and I was going to ask Bev to get a shamrock for me in Dublin. But all of those plans went out of the window when we got off the Metro in the Marais. My charm bracelet was gone and my heart sunk as soon as I realized it. I was heartbroken and in tears. But Dave reminded me that we had the memories at least. I felt a bit better, but nothing can replace what I had. And this time I won’t get another charm bracelet. Instead I will have a pendant made of my favourite charm that I can at least wear every day. Do you have a charm bracelet? If so, which is your favourite charm?

Blueberry Ice Lollies

Make these with frozen blueberries
Recipe Category: Dessert
Makes enough for: 6 ice lollies

for the simple syrup

  • 100 mls lemon juice
  • 85 g fructose
  • 5 juniper berries lightly crushed

for the ice lollies

  • 375 g frozen blueberries
  • 200 mls pink tonic water


for the simple syrup

  • Place the lemon juice and fructose into a small saucepan
  • Place onto the stove over a medium temperature and stir until the fructose dissolves
  • Add the juniper berries and bring to the boil
  • Reduce the temperature and simmer for 5 minutes
  • Set aside to cool and infuse

for the ice lollies

  • Once cool pour into a blender and add the blueberries and tonic water
  • Blitz until completely processed then strain into a jug
  • Pour into the popsicle containers and freeze overnight
