Sticking to a budget? This butter bean hummus is perfect for that. It can be served together with my smokey red pepper dip, or alone.
For those of you who fly on a regular basis you will know it costs more to book one way tickets than return flights. Dave and I have saved up our air miles for the past 4 years. Our aim was to be able to fly business class to London. The only problem was that British Airways release 2 seats per flight. And had we waited for the return flight to open, someone might have already scooped them up. So I took the risk and purchased them using our air miles. The cost of the taxes was slightly more than what we would have paid for half of an economy class flight so that was not too bad. I then had to wait 12 days to book our return flight. We did not have enough miles to fly back home business class but that is maybe a good thing.

We would not want to get used to the lie flat seats as our budget will not stretch to flying that class. I did however manage to get us Premium Economy seats on the way back. The kicker was that the taxes cost more than the outward journey. But that was to be expected. We decided that we would pay for our seats and not risk waiting until check in to choose free seats. We like to sit together, with Dave at the window seat and me next to the aisle. The extra cost meant we have spent a fraction more than what we would have, had we booked our usual return seats in the cattle class. But the experience will be so worth it for sure. Butter Bean Hummus
- 1 x 400g tin butter beans, rinsed and drained
- 15 mls tahini
- 90 mls olive oil
- 15 mls lemon juice
- 1 clove garlic, peeled and lightly crushed
- 2.5 mls fine salt
- Place alll of the ingredients into a stick blender jug
- Process until the mixture is smooth
