Butterscotch Soft Serve | No Churn Recipe

You don’t need to make your own sauce to make this butterscotch soft serve. But it is far better if you do in my opinion.

When the Covid contact tracing app was developed for South Africa, I decided to install it on my phone. My understanding was that it would send a signal via Bluetooth to any other device that had the app installed, as I passed that person. The contact would be momentary and if any person contracted the virus and informed the app, I would be notified. This made total sense when my mom received a notification quite soon after installing the app. She was told the date she had possible contact with the individual. And she knew that on that date she had only been at her local supermarket, with a mask on. So when we both got a notification on Christmas day for contact on the 21st I was not concerned. The only public place I had been was to the airport to fetch my parents.

But the next day my mom read that you had to be within 2m of someone for at least 15 minutes. And the only person with the app that I was that close to was my mother. Did that then mean she had been near someone on the plane who tested positive, and I was being notified for that contact? All very confusing if you ask me. What we really need is for the app to give us the time this took place. When I got another alert for contact on the 30th I was even more convinced you merely had to pass someone. I was out alone at the supermarket on that day. And we all went out for lunch. But given that I was the only person to get the notification it had to have been while I was shopping. Do you use the Covid alert app ?

Butterscotch Soft Serve

This can be made with store bought sauce and condensed milk if you want to cut down on time

For the condensed milk

  • 250 mls milk
  • 100 g fructose
  • 0.625 mls bicarbonate of soda

For the butterscotch sauce

  • 62 g fructose
  • 3.75 mls water
  • 30 mls cream, at room temperature
  • 43 g softened salted butter, cubed

For the butterscotch soft serve


For the condensed milk

  • Place the milk and fructose into a sauce pan
  • Bring to the boil and immediately reduce the temperature
  • Leave on a low temperature setting to reduce, stirring occasionally
  • As soon as it thickens, take off the heat
  • Stir in the bicarbonate of soda, and set aside to cool completely

For the butterscotch sauce

  • Place the fructose and water into a small to medium size saucepan
  • Place onto the stove on a medium to low temperature and allow to heat, without stirring
  • When the fructose is a lovely caramel colour turn the heat off
  • Add the cream while whisking - be careful as it will bubble like mad
  • Then add the butter and continue whisking until completely melted
  • Set aside to cool completely

For the butterscotch soft serve

  • Place the cream into a stand mixer bowl and whisk until soft peaks form
  • Add the condensed milk and whisk to combine
  • Fold in the butterscotch sauce and pour into a freezer proof container
  • Place into the freezer for at least 6 hours before serving


Store the excess condensed milk in a sterilized glass jar, or add it to coffee! See this post on how I sterilize my glass jars.
