This chocolate and orange gelato is reminiscent of candied oranges dipped in chocolate. The texture is amazingly smooth and it is packed full of orange flavour with rich chocolate.

A few months ago we went for a casual dinner with friends to Arugula and I chose my entire meal around what was on the dessert menu. This is not unusual as I always look at what the sweet offerings are before choosing what I am going to eat for my main course. On the menu was home made chocolate and orange ice cream. I chose a main course only and left space for the ice cream, only to feel let down after the first bite. It was smooth, and chocolatey, but there was not even a hint of orange. Basically, it did not do what it said on the box. Knowing I could produce a better flavoured ice cream I decided to use the orange and ginger marmalade I had made to infuse my gelato as ginger works just as well with chocolate as orange does. This chocolate and orange gelato ticked all of the boxes when it came to flavour. You can taste the chocolate and the orange is just as prevalent without being overpowering. The ginger adds some warmth to the dessert, but if you cannot find this flavour combination in a marmalade, then just use plain orange.

Chocolate And Orange Gelato
Ingredients
- 500 mls milk
- 1 orange, peel only, cut in thick strips
- 100 g orange and ginger marmalade
- 40 g cocoa powder
- 5 egg yolks
- 170 g fructose
Method
- Place the milk, orange peel and marmalade into a sauce pan
- Bring to blood temperature over a medium temperature
- Whisk in the cocoa
- Place the yolks and fructose into a mixing bowl
- Whisk until at the ribbon stage
- Pour half of the milk into the eggs, whisking while you do this
- Add back to the milk and stir with a wooden spoon until a custard forms
- Place into a bowl and set aside to cool
- Cover and refrigerate overnight
- Strain the custard
- Churn as per your ice cream machine manufacturers' instructions

chocolate and orange is the best flavor combo, especially in a frozen treat. One could always add a bit of fine diced ginger in there if not in the marmalade. really love this gelato Tandy!
