Coriander Hummus

When you go through as much hummus as we do, you need to keep adding new flavours to the mix. I particularly liked the flavour of the coriander hummus. I know this is a herb that divides people. Do you like coriander?

When Scarlett was a puppy you could not leave anything edible in her sight. She worked her way through everything she could find. While teething she also learnt that plastic was a good thing to chew on. Watering cans were her favourite, followed closely by pegs. If you left washing on the line and went out, she would pull the things down to get to the pegs. We tried once to leave them in the house when we went out. This was a trial run as Dave and I were sleeping away from home for a night. I did not want to get the house sitter in and so we went out for a few hours, leaving them with access to the house. We came home to everything scattered around the house, and everything plastic destroyed.

The night we slept out I put everything out of her reach. However, she still managed to create havoc, this time breaking a glass jar that was next to her food. Since then we have not dared leave her alone with temptation close by. However, I did leave 3 dresses on the washing line when we went out for dinner the other night. We came home to discover that she had got one down. Thankfully she had not carried it too far, or destroyed it. I cannot same the same for the peg however. Then on Sunday Dave and I went to friends for drinks. He thought I had put the dog door on, and I though he had done so. We came home to be greeted by our Jack Russell. I was expecting mayhem and was quite impressed that only one thing had been destroyed beyond salvation.

Coriander Hummus

This is a variation on traditional hummus

Ingredients

  • 1 x 400g tin chickpeas
  • 5 mls tahini
  • 15 mls lemon juice
  • 60 mls olive oil
  • Salt and freshly ground black pepper to season
  • 60 g coriander, roughly chopped

Method

  • Place all of the ingredients into a blender
  • Process until combined and as smooth as you like it
  • At this stage you might need to add some water if you prefer a thinner consistency
  • Adjust the seasoning and serve
