Coriander Mayonnaise | Stick Blender Recipe

Mayonnaise has to be one of the easiest condiments to make at home. The quality will always be good if you use good quality ingredients. I made coriander mayonnaise to go with our corn fritters. This is a regular flavour profile at home as I often buy coriander for a recipe and never use it all up. As I don’t like to throw ingredients away, this is a great use for it.

It took the printer supply company the rest of the day to service the printer. When I gave them the go ahead to do so, they offered to install the new toner for me. I asked them not to for a few reasons. The one being that they had already used up ink from the existing cartridge to do the testing and service. And the second being that I wanted to ensure a new cartridge was supplied. After 6 days of being without a printer on my desk, it was returned. The first thing I noticed was that the toner had little red tags on. This is the first time ever we have had a cartridge arrive like that. The second observation was that the print quality was better, but not excellent. I changed a few settings on my laptop to get that sorted out.

So all in all, I am happy. Thankfully we have another printer at work. This is a laser jet printer I purchased when still at university. Without giving away my age, it has lasted me nearly 30 years. And in all that time it has never needed a service *touch wood*. Given the amount of printing we do at work, that is quite something. And I am not sure what we would have done if we didn’t have a spare printer for the week mine was being looked at. It goes to show however, that things made last century were made to last. Nowadays, printers are seen as disposable items as the cartridges are often more expensive than buying a new one! What this says about our throw away mentality is just pure madness in my opinion. Do you have a printer, and if so, how old is it?

Coriander Mayonnaise

If you don't like the taste of coriander you can use flat leaf parsley instead

Ingredients

  • 1 egg
  • 5 mls Dijon mustard
  • 5 mls apple cider vinegar
  • salt and freshly ground black pepper to season
  • 250 mls canola oil
  • 10 g coriander

Method

  • Carefully break the egg into the jug of a stick blender, making sure not to crack it
  • Add the mustard and vinegar and season generously
  • Pour in the oil and then carefully place the stick blender over the yolk
  • Blend slowly making sure the mayonnaise forms at the bottom of the container before lifting the blender up
  • Once blended, add the coriander and blend again to combine

  • We have had a lot of trouble with printers, Tandy and have had four in the past 8 years. I agree that modern products have a built in lifespan. I've always thought about making mayonnaise. Thanks for the recipe.

  • Love this. I love a good mayo, especially home made, but with cilantro/coriander?! Even better!

  • I used to make mayo but stopped because of the unreliable safety of eating raw eggs. It may be safer now, but the risk is still there. I do like coriander and use it often -- the stems and unused leaves are good in soup or stock.
