You will need a fair amount of time set aside to make this deep dish breakfast pizza. If you have a bread maker it will help cut the time down. If not, I suggest you make the dough the day before.

Today is not an easy day! We should be celebrating my mother-in-law’s 100th birthday. Instead we are celebrating her life. She passed away peacefully 24 days ago. And as much as the news was expected, it was still a shock. At 18h14 she closed her eyes for the final time. James called David to let him know and on the 3rd of December the three of us got together to toast her, and reminisce. When I met Marguerite I took to calling her mum, her only in-law to do so. She was an amazing person and exceptionally bright. One time I went to visit she was reading up on quantum astronomy. Her knowledge was vast and she would read up on mathematical problems just as often as she would consult books on plants.

In her 90’s she purchased a copy of Calculus For Dummies. She must have found it very useful as she even gave a copy to Dave. And when she wanted to know an answer to a particular question she bought an encyclopedia on mathematics and mathematicians. I took great delight in finding books on local fauna and flora for her. And even greater delight in paging through her recipe books. I shall treasure the one she gave me as a lasting memory. Not that Marguerite cooked much. On one visit Dave and I made her shakshuka eggs for breakfast but more often than not we would go out for meals. And when she could no longer enjoy that, we would have casual lunches at her house. We did not see as much of her as we would have wished, but she will always hold a special place in our hearts. Rest in peace mum

Deep Dish Breakfast Pizza

This is a great pizza to make when you have guests

Ingredients

For the pizza base

  • 135 mls water
  • 3 g instant dry yeast
  • 3 g fructose
  • 187 g flour, plus extra for dusting
  • 15 g semolina flour
  • 45 mls canola oil, plus extra for greasing
  • 3 g fine salt

For the pizza

  • Cooking spray
  • 70 g hard cheese, grated
  • 8 baby tomatoes, halved
  • 6 mushrooms, stalks removed and quartered
  • Salt and freshly ground black pepper to season
  • 4 eggs

Instructions

For the pizza base *

  • Place the water, yeast and fructose into a stand mixer bowl
  • Stir to combine and set aside for 5 minutes
  • Add the flour and oil and use a dough hook to combine
  • Once combined, add the salt and then use the hook to knead for 10 minutes
  • Turn out onto a lightly floured surface and shape into a ball
  • Oil a bowl and place the dough into the bowl, seam side down
  • Cover and set aside to prove until doubled in size

For the pizza

  • Preheat the oven to 245° Celsius and grease a loose bottomed quiche tin with cooking spray
  • Place the dough into the tin and use your fingers to stretch it so that it comes up the sides
  • Set aside to rest for 5 minutes then place into the oven to bake for 15 minutes
  • Remove from the oven and reduce the temperature to 220° Celsius
  • Poke holes in the centre bit and press it down and add the cheese, tomatoes and mushrooms
  • Season and place back into the oven for 10 minutes
  • Remove from the oven and break the eggs on top, trying to get one in each quarter
  • Season and place back into the oven for 12 minutes
  • emove from the oven and the dish and serve hot

Notes

* if you are using a breadmaker, place all of the ingredients into the container in the order listed. Set the breadmaker to dough / pizza and press start. Mine takes 50 minutes, which is enough time to get the rest of the ingredients ready and the oven heated up.

  2. Your MIL sounds incredible. I’m so sorry she was just shy of reaching the 100 milestone. Still, it sounds like she really “lived” And this breakfast pizza looks stellar, but I agree I would make the dough the day before so we can eat in a timely fashion. Happy New Year to you!!!
