For this month’s The Food In Jars Mastery Challenge we were tasked to turn our hand to drying and dehydration. I made dried grapefruit and it is a super saving to do this at home. And so worth the wait!

I should have been writing blog posts but instead I spent the day clicking the send and receive icon on my emails. I sent a company a complaint and all I wanted was a response before I did anything else. The issue was taking up my focus. I could not seem to concentrate on anything else, and when I write I need to pay attention. Often there are things that distract me. Sometimes I should try to eat before the hunger pangs become my sole focus. Other times it is when people disrupt my chain of thought. But on this day, it was the lack of reply to my email.

I waited, and waited and waited but yet no response was forthcoming. After 24 hours I sent a message to make sure my email had been received. There are some things I do mind waiting for, and that is a reply to an email or message. And then there are some things that take time. And the result is fantastic. These dried grapefruit took 5 hours. Luckily for me I have two ovens so I could get the tart shells baked in one, while the other dehydrated the citrus fruit. They added the perfect pop of taste and crunch to my lemon curd tartlets. And I have two more recipes to test them out in.

Dried Grapefruit
Ingredients
- 2 grapefruit or more if you want to make a bigger batch
Method
- Preheat the oven to 80° Celsius
- Place some parchment paper onto the wire rack of your oven
- Thinly slice the grapefruit using a sharp knife
- Place onto the parchment paper
- Put the wire rack into the oven into the middle slot
- Turn the grapefruit once after two hours, and again after another two hours
- After a total of 5 hours they should be completely dried out

I have never had dried grapefruit, but I do love fresh grapefruit so I am sure I would love this too. And loved the fact this is super easy too.

Great idea Tandy! I have never tried to dry grapefruit but that is a great idea to add on top of baked goods.

oooh that sounds like citrus heaven paired with lemon tarts! i haven’t played around w dehydration much (i tried to dehydrate minced onions and they just got leathery sigh), but i really should.
