Nonya Pot Braised Chicken

  • 1 spatchcock chicken
  • Coarse salt for rubbing
  • 60mls soy sauce
  • 60mls Shaoxing wine
  • 15mls caster sugar - I used fructose
  • 15mls canola oil
  • 1 onion, quartered
  • 3cm piece fresh root ginger, peeled and finely chopped
  • 2 red chillies
  • 2 cloves garlic, finely chopped
  • 2.5mls olive oil
  • 2 leeks cut in half, lengthwise
  1. Rub the salt over the entire chicken
  2. Place the chicken, soy, wine and sugar into a large ziploc bag
  3. Rub the marinade over the chicken
  4. Leave to marinade in the fridge for 2 hours
  5. Preheat the oven to 180°Celsius
  6. Heat the oil in an ovenproof dish
  7. Remove the chicken from the marinade, reserving the liquid
  8. Brown the chicken
  9. Add the onion, ginger, chillies and garlic
  10. Cook for a couple of minutes
  11. Add the marinade and 60mls water
  12. Bring to the boil
  13. Cover and cook in the oven for 1 hour
  14. Remove the lid and leave in the oven while you prepare the leeks
  15. Heat the oil in a frying pan
  16. Sauté the leeks for a couple of minutes
  17. Add to the chicken and serve
