Mushroom Rolls
Adding mushrooms to ordinary sausage rolls takes these to a whole new flavour level
  • 15mls olive oil
  • 6 spring onions, thickly sliced
  • 2 cloves garlic, thinly sliced
  • 250g minced beef
  • 250g mixed mushrooms, thinly sliced
  • Salt and freshly ground black pepper to season
  • 10 stalks, fresh thyme, leaves picked
  • 5mls sweet paprika
  • 10g flat leaf parsley
  • Zest of 1 lemon
  • 30mls sour cream
  • 2 sheets phyllo pastry
  • 20g butter, melted
  1. Place the olive oil into a large frying pan
  2. Heat over a medium temperature
  3. Add the spring onions and sauté until soft
  4. Add the garlic and cook for 1 minute
  5. Add the mince, season generously and brown
  6. Add the mushrooms and season generously
  7. Add the thyme and paprika and leave to cook until all the liquid has evaporated
  8. Leave to cool
  9. Preheat the oven to 160° Celsius
  10. Finely chop the parsley and lemon zest together
  11. Add to the mixture with the sour cream
  12. Stir to combine and adjust the seasoning if necessary
  13. Place a sheet of phyllo pastry onto a dry surface
  14. Brush with melted butter
  15. Place the second sheet on top and brush with melted butter
  16. Place the mushroom mixture along the top width of the pastry
  17. Roll into a sausage shape, as tightly as you can without tearing the pastry
  18. Trim the edges and cut into 4 equal lengths
  19. Place onto a lined baking tray and brush the top with melted butter
  20. Bake for 30 minutes
  21. Cool slightly on a wire rack before serving
