Mini Cup Cakes
These are really light and fluffy

  • 135g self-raising flour
  • 70g fructose
  • 45g butter
  • 80mls buttermilk
  • 1 egg, lightly beaten
  1. Preheat the oven to 200° Celsius
  2. Place the flour and fructose into a large mixing bowl
  3. Put the butter into a glass mixing bowl and melt in the microwave
  4. Whisk in the buttermilk and egg
  5. Pour into the dry ingredients and stir to combine
  6. Divide the batter equally into a six hole mini muffin tin
  7. Place into the oven and bake for 14 minutes
  8. Remove from the oven and remove the mini cup cakes from the tin
  9. Leave to cool on a wire rack and serve with jam
