Dried Apricots
 
 
Make these when you have an abundance of fresh fruit

Ingredients
  • 250g apricots, depipped and quartered
Method
  1. Preheat the oven to 80° Celsius
  2. Place the apricots, cut side up onto a wire rack lined with baking paper
  3. Bake for an hour, remove from the oven and turn, cut side down
  4. Return to the oven and bake for an hour
  5. Remove from the oven and turn, cut side up
  6. Return to the oven and bake for 6 hours
  7. Turn the oven off and leave the apricots to cool in the oven
  8. Store in an airtight container and use as needed
