Chicken Stuffed with Mushrooms, Wrapped in Bacon
  • 2 chicken breasts, skinned and boned
  • 8 rashers streaky bacon
  • 250g mushrooms, sliced
  • 15mls olive oil
  • 30mls crème fraîche
  • black pepper to season
  • 1 handful fresh flat leaf parsley, roughly chopped
  1. Preheat the oven to 180° Celsius
  2. heat the olive oil in a pan and fry off the mushrooms
  3. season with black pepper
  4. add the crème fraîche and heat through
  5. add the parsley
  6. take off the heat and allow to cool slightly
  7. lay the bacon on a piece of cling film, 4 slices per breast
  8. lengthen the bacon with the back of a knife
  9. place the chicken breast on the bacon
  10. season with black pepper
  11. place ⅓ of the mushroom mixture in the middle of each breast
  12. roll up tightly
  13. seal the bacon in the pan and then transfer to the oven and bake for 25 minutes
  14. serve with the rest of the mushrooms
