Fish Finger Roll With Crushed Peas

The first time I had a fish finger roll was with our friend Alastair in Brackley. Dave chose this as his lunch when we were in Cookham. And when time was running against me, I made this for our lunch.

For my December break I decided I would set a timer for one hour. This timer would be used for all the tasks and chores I do in a day. My first one hour slot starts with computer time. First I check my work emails, and once I have replied to all those that need a response I move on to my blog. First replying to comments and then reading other posts. And only after that, if time allows, do I write a blog post. It is quite strange to work this way, but I did not want to be stuck in front of the screen for hours. Another one hour slot has been set aside for cleaning. As much as cleaning is a necessity, I do not want to spend too much time spring cleaning. Between laundry and dishes, bathrooms and kitchens I already have a lot to do.

Time has been set aside for shopping. If I can do that at Woolworths, I include a walk with the chore. If not, I am ensuring that all my shopping is done at once, in one place if possible. My aim was to create two dishes a day over this time, but to date that has just not happened. I am taking it slowly so that I can enjoy my cooking. I am spending time reading, and that has to be limited otherwise I would spend all day sitting with my nose in a book. The last one hour slot has been dedicated to looking at accommodation for Croatia as we are going there next December for a family holiday. Fish Finger Roll

This makes for a very tasty, and filling lunch

Ingredients

For the watercress mayonnaise

  • 2 g watercress, roughly chopped
  • 30 mls mayonnaise

For the fish fingers

  • 15 mls flour
  • Salt and freshly ground black pepper to season
  • 1 egg
  • 25 g breadcrumbs
  • 100 g firm white skinless fish fillets, cut in half
  • 30 mls canola oil
  • 1 round bread roll, cut in half

For the crushed peas

  • 35 g frozen peas
  • 5 g butter
  • 5 mls lemon juice
  • 1 g mint leaves, finely chopped

Method

For the watercress mayonnaise

  • Place the watercress and mayonnaise into a bowl, stir to combine and set aside

For the fish fingers

  • Place the flour onto a plate and season generously
  • Break the egg into a bowl and whisk until completely slack
  • Pour the breadcrumbs into a bowl
  • Coat the fish fingers in the flour, and shake off the excess
  • Dip into the egg to coat and then cover with the breadcrumbs, pressing them gently to coat completely
  • Heat the oil in a frying pan over a medium temperature and cook the fish fingers for 3 minutes per side
  • Set aside to drain on some kitchen roll

For the crushed peas

  • Place the peas into a microwave safe bowl and microwave for one minute
  • Melt the butter in the same pan you cooked the fish in
  • Add the peas and lemon juice and crush with a fork
  • Season to taste and then add the mint, stirring it through the peas

Putting it all together

  • Place the roll, cut side up, under a grill and lightly toast
  • Remove from the oven and place the peas on the bottom half of the roll
  • Top with the fish fingers, the mayonnaise and the top half of the roll
  • Eat straight away!

  2. I definitely set my own timer when it comes to cleaning Tandy ha, ha but difficult with cooking. I am behind with blogging though as well. We would call these Crumbed Fish burgers however have never had them with peas. Sounds delicious.
