Ginger Noodles

Making my own noodles is a huge saving. And wanting to try something different, I added fresh ginger to the dough. These ginger noodles are packed full of flavour. And they offer up the antibacterial and antiviral health benefits that ginger adds to our diets.

When I purchased my first property the interest rates were fairly high. My first year of repayments and levies were slightly more than I had been paying in rent. But, the second year I did not have to brace myself for a 10% rental increase. And even though the interest rate fluctuated I found myself better off. By year three all my expenses related to being a homeowner were less than what my rent would have been. The bank gave me an option of always paying the highest amount I had ever been charged. This was based on the highest interest rate levied. And I took this up as by the time the interest rate dropped I was used to paying that amount of money into my bond. This worked out quite well for me when it came time to sell as I owed very little to the bank.

That money was invested until we bought a parcel of land on which we have built our house. I took a bond out to cover the cost of the land and to pay for the building costs of the cottage. At the time, the monthly repayments were extremely high. Our interest rates were crazy and I was paying more for the land than I was paying to rent a three bedroom house. Once again I went for the option of always paying the highest amount I had ever been charged. And this has come in handy 18 years down the line. The interest rates have dropped significantly in the country. And the extra money I have paid into the account has been used as savings. I will be able to pay my bond during lockdown. And I can access the savings portion to pay my bills.

Ginger Noodles

The ginger offers a fiery punch to the noodles

Makes enough for: 2 people

Ingredients

  • 150 g 00 flour
  • 1 pinch fine salt, plus extra for cooking
  • 1 egg
  • 1 egg yolk
  • 10 g freshly grated ginger

Method

  • Place the flour, salt, egg, egg yolk and ginger into the bowl of a stand mixer
  • Use the dough hook and bring the dough together
  • Knead for 5 minutes then tip out onto a work surface
  • Shape into a ball and cover with cling film
  • Place into the fridge to rest for 30 minutes
  • Remove from the fridge and cut in half
  • Press the dough flat with your hands and then use a pasta machine to laminate the dough
  • Once silky smooth, process through your pasta machine to the thinnest setting
  • Then cut the pasta into noodles either by hand or using a pasta cutter
  • Leave to dry over a rack while you bring a large pot of water to the boil
  • When boiling add a generous amount of salt to the water
  • Bring back to the boil then add the noodles to the water
  • Stir to ensure they do not stick together
  • Cook for 2 minutes then remove from the water
  • Serve with a broth or with a stir fry
