Guacamole is an avocado based dip, commonly found in Mexican cuisine. To me, this is a great way to use up an abundance of avocados. And is perfect for serving with vegetables as crudites. Or as I have done here, with corn fritters.
While I was in the bank, the teller and I were discussing our masks. I told her that wearing mine causes my glasses to fog up. This is a problem for me as I need my glasses to read. She told me the reason my glasses were fogging up was because I did not have my mask fastened tight enough. So, the next day I ensured that it was secure and as close to my skin as possible. I put my mask on in the car, and went into the Mall to do my shopping. This takes much longer now as you have to wait in queues to get into each shop. I probably had my mask on for a total of five hours. I took it off to eat lunch and when I was in the car, driving between shops.
But by the time I got home I had a headache. I am not sure if it was from breathing in my own recycled air. Or because the mask was so tight around my head. But whatever caused it, I was physically exhausted. I had one more errand to run and chose to walk the half block to make the collection. I did not tie the mask on the bottom and let it hang loose so I could breathe. That coupled with the fresh air cleared my head straight away. I have now decided that I am going to wear my mask like that all the time. Being able to breathe easily and not have a headache far outweighs my need to have clear glasses. My next step might just in fact be contact lenses! How do you wear your mask, if you have to wear one at all?

- 200 g avocado pulp
- 20 g fresh coriander, roughly chopped
- 10 g green chillies, finely diced
- 15 mls lime juice
- salt and freshly ground black pepper to season
- Place the avocado, coriander, chilli and lime juice into a mixing bowl
- Stir to combine and season to taste
- Serve straight away
