Hasselback Potatoes Baked In The Oven

This simple recipe for hasselback potatoes will not let you down. It is just a fancy way of preparing this side dish and will look good on your Christmas table.

Last week Friday I was let down by a supplier. We found out on the Thursday that we were not getting any goods and that they would all be delivered to us the following day. We arranged with the logistics company for delivery first thing in the morning and I came into the office early. When my staff arrived, we were told that the truck had only just arrived at the depot. They would offload and send us our goods by 10am. When the time came and we still did not have any stock I was not too perturbed. I knew that the traffic coming out of Cape Town was already heavily congested. But, when my staff returned from their deliveries to Cape Town I asked them to follow-up. We were then told that there had been an overflow in Johannesburg and our goods were not on the truck.

This makes not a dot of difference to my supplier. He gets to go on leave as the goods are out of his stores. But I had to come in to work and sit around waiting for the truck to arrive on Tuesday. Then unpack and check the goods before entering them into stock. And once that was done I could invoice out the stock that our customers were expecting last week. To top this, my driver had to come back from leave to do the deliveries. And whereas I have no issue with working through the December break, I do have issue with being let down.

Hasselback Potatoes

This is an easy side dish to make for any meal

Ingredients

  • 1 generous size potato per person
  • Olive oil for drizzling
  • Salt and freshly ground black pepper to season

Method

  • Preheat the oven to 220° Celsius
  • Carefully slice thin sections into each potato, ending as close to the bottom as you can, without cutting through
  • Place the potatoes into an oven proof dish and drizzle generously with olive oil
  • Rub in gently and then season well
  • Bake for 70 minutes and serve with butter
