Lavender And Lime Drizzle Cake

Whenever I can, I create recipes bespoke for my blog. This lavender and lime drizzle cake came about quite by chance. I had a gift of lavender cordial that I was not too sure what to do with. And I had bought limes for a recipe and had some left over. I adapted Nigella’s recipe for lemon and elderflower drizzle cake from her latest recipe book.

Countries around the world are crying due to the lack of tourism. It is totally understandable that borders were closed for a while. But life has to start moving towards normal. The South African borders have been open for a long time now. And we have very little in the way of constraints. A negative PCR test is required when coming into the country. But if you have not had one done, testing is offered at the airport. And the cost is not that high. We don’t require a quarantine period for people who have returned a negative test. And I am sure in time, vaccinated people will be exempt from this. Each country in Europe has its own requirements. This makes it difficult to know if you can cross borders once you are there.

When we were getting ready to fly to The Netherlands I did a lot of research. We could fly to France or Germany without the need for a test or quarantine. But for Holland we would need to have the test 48 hours before we travelled. Luckily we would not need to quarantine as our trip is only as long as the period required. South Africa does not have a digital format for our vaccine cards which is a necessity in Europe. And each country has its own App. One would think with this being a global pandemic, global solutions could be found? I have had copies of our vaccine cards certified and laminated, and hopefully that will suffice when we try and go and do something while we are away. Does your country have a digital vaccine App and was it easy to load your information?

Lavender And Lime Drizzle Cake

This cake is beautifully moist and lightly fragranced by the lavender

Ingredients

for the cake

  • 175 g softened salted butter
  • 150 g fructose
  • 2 limes, zest only *
  • 100 g flour
  • 75 g almond flour
  • 5 mls baking powder
  • 3 eggs
  • 30 mls lime juice

for the drizzle

  • 2 limes, juice only *
  • 50 mls lavender cordial

Method

for the cake

  • Preheat the oven to 180° Celsius
  • Place the butter, fructose and lime zest into a stand mixer bowl and cream until light and fluffy
  • Place the flours and baking powder into a mixing bowl and whisk to combine
  • Add 1 egg to the stand mixer and beat in until combined
  • Add a third of the dry ingredients and mix in
  • Scrape down the sides, add 1 egg and beat in until combined
  • Add a third of the dry ingredients and mix in
  • Scrape down the sides, add the last egg and beat in until combined
  • Add the rest of the dry ingredients and mix in
  • With the machine on the lowest speed slowly pour in the lime juice
  • Once combined, pour the batter into a lined 20cm round tin
  • Place into the oven and bake for 35 minutes while you make the drizzle

for the drizzle

  • Plcae the lime juice and cordial into a small measuring jug and stir to combine
  • Once the cake is baked, remove it from the oven and prick all over with a skewer
  • Slowly pour the drizzle over the cake and leave to soak in
  • Leave the cake in the tin to cool completely before removing and serving
