Lime Tart With A Shortcrust Pastry Base

I worked very hard, repeating the recipe over and over again, to perfect my gluten-free shortcrust pastry. Dave and I sampled a lot of tarts in doing so. But I made sure not to duplicate the flavours. This lime tart was rich, and surprisingly sweet even though packed full of lime flavour.

I watch a lot of television. This is not something I should admit to doing. But, it is my reality. We have a home gym and I train with the TV on. My first choice will be sport as you don’t have to watch every minute if you are listening. The second option is the news. If I am on the stepper I can pay attention to the screen and I will watch a show that Dave does not enjoy. And then when he comes home we watch all sorts of programmes. In amongst this is a slew of series. What I cannot understand is how come the same actors are used over and over again in different shows? A doctor in one series I am watching without Dave has become a lawyer in a something we are watching together. And you cannot dissociate the actor with their character.

Ellen Pompeo will always be Meredith Grey! A bit limiting I am sure, but after 16 seasons it is who she is. At present we are watching Rob Lowe act in Wild Bill as an American policeman. His character, Bill Hixon has been tasked to sort out the East Lincolnshire department. He is a widower with a young daughter who tried to commit suicide, and a few problems of his own. After 6 episodes the show was cancelled and Rob moved on to a new show, 9-1-1 Lone Star. Here, as Owen Strand he has been employed to revive a fire station in Austin Texas. This time he has relocated from New York with his young adult son, who has tried to commit suicide. With all the people available to work as actors you would think they could at least find new people to work in different shows!

Lime Tart

This tart is packed full of lime flavour

For the pastry (or use ready made shortcrust pastry)

  • 170 g gluten-free flour, plus extra for dusting *
  • 70 g coconut flour
  • 160 g salted butter, cubed
  • Zest of 1 lemon, finely grated
  • 90 g fructose
  • 1 egg

For the tart

  • 75 g butter
  • 3 eggs
  • 100 g fructose
  • 7 limes, zest and juice


For the pastry

  • Place the flour, butter and lemon zest into the bowl of a stand mixer
  • Mix until the flour resembles bread crumbs
  • Add the egg and mix until a dough forms
  • Turn out onto a lightly floured surface and shape into a disc
  • Wrap in cling film and place into the fridge for 30 minutes
  • Roll out between two sheets of baking paper

To blind bake

  • Grease and line a baking tin and carefully place the pastry into the tin
  • Refrigerate while you preheat the oven to 180° Celsius
  • Dock the bottom of the pastry, line with baking paper and fill with baking beans
  • Place into the oven and bake for 20 minutes
  • Remove from the oven and remove the baking beans and paper

For the tart

  • Increase the oven temperature to 240° Celsius
  • Place the butter into a glass bowl and microwave in 30 second bursts until melted
  • Set aside to cool while you crack the eggs into a mixing bowl
  • Add the fructose and whisk until at ribbon stage
  • Then add the lime juice and zest and the cooled butter
  • Whisk to combine then carefully pour into your pastry shell
  • Return to the oven and bake for 15 minutes
  • Remove from the oven and allow to cool before removing from the tin and slicing


* my first choice is cassava flour, but use what you have to hand

  • I don't watch any television, Tandy. Not a single programme. I spend my time writing, reading, blogging or working with my kids taking up all the rest of my time and always coming first, of course.
