Microwave Popcorn

I bought a huge packet of corn kernels before we knew that we would be in lockdown. Making microwave popcorn certainly came in handy for a healthy treat while we were stuck at home.

One of our local stores have weekly three for two specials which I take advantage of when I can. When I take the penultimate item out of the cupboard I write it on my shopping list. I then wait for the special, and buy three. As I only pay for two of the items, the saving is really worthwhile. This is especially so for my supplements, toothbrush heads and razor blades. I don’t always get the timing right, but for the most part I do OK. Last year I bought toothpaste on the special. And when I got home, I realized it was not the one I liked. So, I went out and bought another three. I can tell you, we will have clean teeth for as long as lockdown continues. I did not change my habit in the weeks leading up to this either.

I did not want to spend money I might need for something else, like paying my mortgage, on things that were not essential. I am really grateful that I have a fair bit of these items at home. And I will use every last one of them before I buy them again. This will be the case until my revenue stream starts again. And hopefully it is not too long before that part of my life goes back to normal. In the meantime I have two shopping lists. One for things we really need. And the other for what we might run out of in the next few months. I am also shopping less often and carefully planning those expeditions when we do go out. Did you stockpile toiletries before lockdown?

Microwave Popcorn

This really is a great way to get your popcorn made in no time at all

Ingredients

  • 20 g popcorn kernels
  • canola oil to drizzle
  • chilli salt to season
  • 5 g Parmesan, grated

Method

  • Place the popcorn kernels into a glass bowl
  • Cover with a plate and place into the microwave
  • Cook on high for 3 and a half minutes
  • Carefully remove from the oven and set the plate aside
  • Drizzle the oil over the popped corn, season with salt and add the cheese
  • Toss to combine and pour into a bowl and enjoy straight away
