Pomegranate Ice Cream

I made this pomegranate ice cream in summer when I had fresh pomegranates. I am so glad we have had a long cold winter as this was still sitting in the freezer. Dave and I enjoyed it as soon as it got warm again, with a little bit of ginger granola for crunch.

I am sure we can all stick our hands up and say we have re-gifted a present. I know that I have done so. Sometimes I get things I really don’t need. And other times a gift is something I already have. Often I get given something I will never use, but I know someone else who will. I really don’t feel bad about doing this. But there are a few caveats to me doing so. The one is to ensure I do not give someone something they have given me. I don’t want anyone to feel bad about being thoughtful. I also make sure I do not re-gift that present to someone in the same social circle. There are a few reasons for this. The person giving me the gift could have got it from someone else. This has happened to me before.

I was given something from friend A who had received it from friend B. And friend B gave me the exact same gift a few months before that. Also, the person I give the present to could pass it on to the original giftee, which would have the same result as if I had done so. But can you imagine being given a gift with the card from the originator still inside? That happened recently and it leaves one not knowing how to react. It is not as if the gift was given without thought, because it was. But it shows that the person giving the gift did not really want to spend any money doing so. And had they known the card was still inside, I am sure they would be mortified. So nothing has been said, other than thank you. Do you re-gift?

Pomegranate Ice Cream

This no churn recipe is super simple to make
Recipe Category: Dessert
All Rights Reserved: An original recipe from Lavender and Lime


  • 350 mls whipping cream
  • 80 g icing sugar
  • 175 mls pomegranate juice
  • 80 g pomegranate arils


  • Place the cream and icing sugar into a mixing bowl and whisk to soft peak stage
  • Add the pomegranate juice and whisk to incorporate
  • Fold in the pomegranate arils
  • Place into a lidded freezer proof container and freeze for at least 4 hours before serving
