Chocolate Cake From Sim B Made With Yoghurt

I have never baked a cake using yoghurt and so when I saw this recipe for Sim B’s Chocolate Cake, I decided to print it and add it to the list of ‘recipes to try’. The batter is very thick, but the cake comes out light and is very tasty. It needs icing, but as we were headed out, I did not have time to ice the cake, before tasting it.

Sim B's Chocolate Cake

  • 430 mls self raising flour
  • 250 mls fructose
  • 125 mls cocoa powder
  • 250 g plain yoghurt
  • 2 eggs
  • 5 mls bicarbonate of soda
  • 5 mls vanilla extract
  • 120 g butter at room temperature


  • Preheat the oven to 180° Celsius
  • mix everything together
  • pour into a ring tin
  • bake for 30 minutes

The ingredients I used to make Sim B’s chocolate cake
  • you can make your own self raising flour by combining 150g flour with 10mls baking powder. Remember to mix well before using
  • I use fructose but you can use sugar if you prefer
  • always buy good quality cocoa powder and do not use drinking chocolate as a substitute
  • I buy double thick Greek yoghurt
  • the eggs I use are extra large and weigh between 59g and 66g (shell on)
  • buy the most expensive vanilla extract you can afford. It is worth the expense
  • use unsalted butter for this recipe

Edit: if I were to write this recipe today, 10 years down the line I would use weight measures and not mls. This is to assure accuracy in my recipes. I would also write the method down more precisely than above. But I am leaving everything as is to protect the integrity of my blog. And to show how far I have come in recipe development.
