Skinny Desserts is all about indulging yourself without increasing your waistline. Kathryn Bruton has created 80 recipes that use low calorie ingredients and the result is desserts that are under the 300 calorie mark. She does not use sugar or flour substitutes in her baking and most of the recipes use standard pantry ingredients.
Chapters are divided into:
- Cakes, Tarts & Pies
- Chocolate
- Fruit
- Meringues
- Frozen
- Petit Fours and Small Bites
Recipes that caught my eye:
- bitter chocolate, pistachio and pomegranate torte (p14)
- orange yoghurt cakes with pomegranate glaze (p21)
- passion fruit tarts (p22)
- chocolate mousse cake (p49)
- rich chocolate fennel cream pots with pomegranate (p52)
- blueberry, lemon and vanilla crumble (p71)
- peaches in sauternes with crème fraîche and pecans (p80)
- lemon grapefruit possets (p86)
- caramelized honey semifreddo with nectarines (p116)
- malt milkshake pops (p128)
- pistachio, cranberry and chocolate biscuit bites (p147)
- lemon and juniper portuguese custard tarts (p153)
What I thought:
For those of you who bake by sight, Skinny Desserts is not the book for you. Not all the recipes have photographs which means you have to use your imagination when making them. This also influenced which recipes caught my eye.
What I made:
I made the chocolate mousse cake which did not quite set after the baking time. But that does not detract from how good it is. The cake is very rich and you only need a very small slice to satisfy your sweet cravings.

An interesting sounding recipe book, Tandy. Thanks for sharing.
I thought so too!
under 300 calories – these desserts may have hit the sweet spot…
I think so too!
That’s just what I need .. eat deserts and stay slim.. 😉
Don’t we all 😉
I like the sound of the desserts although I always bake by sight so no pictures would probably mean that I wouldn’t make anything.
It’s weird to bake without seeing the end result first.
I think this sounds great. Always trying to shave a few calories here and there!
Me too!
