Summer Berry Terrine Made With Apple Cider

Using locally sourced, and seasonal berries, I made this summer berry terrine. I used apple cider in the recipe but you could just as easily use white wine, or anything with bubbles, such as MCC. Make sure it is an alcoholic drink you would enjoy.

Since getting my terrine for my birthday I’ve not done much in the way of making terrines. I’ve baked bread in it and made a cake but I kind of stopped there. As I had an opened bottle of cider to use up I decided to make a berry terrine. We have a really lovely selection of summer berries available to us and I chose just three for this dessert. There is no need to limit yourself to my choice, use what you can get. I know that overseas you have a far wider variety than we do so let your imagination run wild. If you use frozen berries be sure to defrost them on paper towels before using them in the recipe.

Summer Berry Terrine

  • 500 mls apple cider
  • 5 gelatine leaves
  • 275 g strawberries, hulled and cut in half
  • 175 g blackberries
  • 200 g blueberries


  • Put the cider into a heavy bottomed pot and heat
  • While you are doing that place the gelatine leaves into a bowl and cover with cold water
  • Leave to steep for 5 minutes and wring out
  • Add to the cider and whisk in to mix
  • Oil your terrine and line with clingfilm
  • Place a layer of strawberries on the bottom then cover with the cider
  • Next make a layer of blackberries and cover with cider
  • Then do another layer of strawberries and cover with cider
  • Last do a layer of blueberries
  • Pour over the rest of the cider
  • Cover with the lid and place into the fridge for at least 4 hours to set
