Ten years ago I was stopped in a roadblock and asked for my drivers’ license. It was only when the traffic officer pointed out that mine had expired that I realized this had happened. Not wanting to ever be in this situation again I diarized the renewal date. In South Africa we need a new license every 5 years. At the end of August last year I went to have my license renewed. About a week after I did so I received the renewal notice. This was quite prompt of both our postal service, which is dismal, and the company that handles the printing of the cards. What was even more amazing is that they managed to get this part done while their staff were on strike. It took over 2 months for the license to get printed, and nearly 3 weeks for the postal service to deliver the notification.

In the time between my license expiring and the new one arriving I had to drive around with the receipt. This would be proof that I had applied for my new card and I would not be fined if stopped in a roadblock. I was quite fortunate that we were not travelling as during that period. I doubt that any rental company would have accepted my receipt and expired license as being valid. Instead, the time was spent at home working on recipes. One that I have made over and over again is this vegan magic chocolate sauce. It is the ideal thing to keep in your pantry and take out for when you want to make your ice cream dessert go from plain to special. Have you made this sauce?

Vegan Magic Chocolate Sauce
Ingredients
- 75 g 100% solid cacao, roughly chopped
- 25 g coconut oil
- 15 g agave syrup
Method
- Place the cacao and coconut oil into a glass bowl
- Microwave in 30 second bursts, whisking in between, until melted
- Whisk in the agave syrup and leave to cool to room temperature
- Pour over ice cream and watch it set!
My best friend is a vegan – I know what to make her next time she comes over. She will adore this, she loves anything chocolate.

A great chocolate sauce and a good one to have on hand. I once had a similar expired license event that cost me about 100 US dollars. After that, it became an Outlook reminder to avoid having the issue again.
That was an exensive expiration!

My children (now adults) loved “Ice Magic”. I didn’t realise it was so easy to make and this version has no nasties, which I always thought were lurking in the the shop bought version. Now I know how to make it I might do a throwback dinner and serve this with my home made ice cream 😋
