Smoked Aubergine And Feta Dip

Make sure your aubergines are firm and cook them until completely soft
Author: an original recipe from Lavender and Lime


  • 1 aubergine stalk removed
  • 50 g feta cheese
  • Salt and freshly ground black pepper to season
  • Pomegranate arils to garnish


  • Place the aubergine onto a gas burner and cook until the skin bubbles and the flesh is soft *
  • Remove from the heat and place into a bowl
  • Cover with cling film and set aside until cool enough to handle
  • Remove the skin and then leave to cool completely
  • Add the feta to the bowl and blitz using a stick blender until smooth
  • Season to taste and place into a serving dish
  • Garnish with the pomegranate arils and serve


* you can use a grill pan on an electrical stove top but it will take longer
