Blueberry Ice Lollies

Make these with frozen blueberries

Ingredients

for the simple syrup

  • 100 mls lemon juice
  • 85 g fructose
  • 5 juniper berries lightly crushed

for the ice lollies

  • 375 g frozen blueberries
  • 200 mls pink tonic water

Instructions

for the simple syrup

  • Place the lemon juice and fructose into a small saucepan
  • Place onto the stove over a medium temperature and stir until the fructose dissolves
  • Add the juniper berries and bring to the boil
  • Reduce the temperature and simmer for 5 minutes
  • Set aside to cool and infuse

for the ice lollies

  • Once cool pour into a blender and add the blueberries and tonic water
  • Blitz until completely processed then strain into a jug
  • Pour into the popsicle containers and freeze overnight
