Hasselback Potatoes

This is an easy side dish to make for any meal
Author: an original recipe from Lavender and Lime


  • 1 generous size potato per person
  • Olive oil for drizzling
  • Salt and freshly ground black pepper to season


  • Preheat the oven to 220° Celsius
  • Carefully slice thin sections into each potato, ending as close to the bottom as you can, without cutting through
  • Place the potatoes into an oven proof dish and drizzle generously with olive oil
  • Rub in gently and then season well
  • Bake for 70 minutes and serve with butter
