Recipe For Watermelon And Tequila Sorbet

Watermelon and tequila are a marriage made in heaven in my opinion. This sorbet is perfect to make when watermelon is at its ripest.

  • 150 g fructose
  • 150 mls water
  • 2 stalks rosemary
  • 300 mls watermelon juice
  • 15 mls tequila


  • Place the fructose, water and rosemary into a small sauce pan
  • Bring to the boil, reduce the temperature and leave to simmer until thickened
  • Strain and measure off 200mls sugar syrup
  • Add the watermelon juice and tequila and stir
  • Refrigerate overnight
  • Churn as per your ice cream machine manufacturers' instructions
