Recipe For Courgette Pakoras

These make for a great stand alone nibble, or a side dish for a curry feast

  • 40 g chickpea flour
  • 8 g flour
  • 2.5 mls garam masala
  • 2.5 mls ground coriander
  • 1.25 mls bicarbonate of soda
  • 0.625 mls cayenne pepper
  • 5 mls lemon juice
  • 50 mls water
  • 1 large courgette chopped
  • Salt to season
  • 250 mls canola oil for frying


  • Place the flours, masala, coriander, bicarbonate of soda and cayenne pepper into a mixing bowl
  • Stir to mix and then add the lemon juice and water
  • Combine until smooth
  • Stir in the courgette and season to taste
  • Place the oil into a small saucepan
  • Heat over a moderate temperature to 185° Celsius
  • Drop dessert spoon measures of the batter into the oil
  • Fry until golden brown, turning once
  • Drain on paper towel before serving
