Blueberry Vinegar

This stunning colour vinegar packs a punch of flavour!

Ingredients

  • 175 g fresh blueberries
  • 250 mls red wine vinegar

Instructions

  • Place the berries and vinegar into a glass bowl
  • Muddle gently to break the skin of the berries
  • Cover and leave in the fridge for 2 days
  • Place the berries and vinegar into a sauce pan
  • Bring to the boil
  • Remove from the heat and set aside to cool
  • Line a chinois with muslin and sieve the liquid
