Nonya Pot Braised Chicken

  • 1 spatchcock chicken
  • Coarse salt for rubbing
  • 60 mls soy sauce
  • 60 mls Shaoxing wine
  • 15 mls caster sugar - I used fructose
  • 15 mls canola oil
  • 1 onion quartered
  • 3 cm piece fresh root ginger peeled and finely chopped
  • 2 red chillies
  • 2 cloves garlic finely chopped
  • 2.5 mls olive oil
  • 2 leeks cut in half lengthwise


  • Rub the salt over the entire chicken
  • Place the chicken, soy, wine and sugar into a large ziploc bag
  • Rub the marinade over the chicken
  • Leave to marinade in the fridge for 2 hours
  • Preheat the oven to 180°Celsius
  • Heat the oil in an ovenproof dish
  • Remove the chicken from the marinade, reserving the liquid
  • Brown the chicken
  • Add the onion, ginger, chillies and garlic
  • Cook for a couple of minutes
  • Add the marinade and 60mls water
  • Bring to the boil
  • Cover and cook in the oven for 1 hour
  • Remove the lid and leave in the oven while you prepare the leeks
  • Heat the oil in a frying pan
  • Sauté the leeks for a couple of minutes
  • Add to the chicken and serve
