Broccoli And Crayfish Pasta

Ingredients

  • 200 g pasta of your choice I used penne
  • 100 g broccoli florets cut into bite size pieces
  • 25 g butter
  • 25 g flour
  • 250 mls vegetable stock
  • 2.5 mls dried parsley
  • Salt and freshly ground black pepper to season
  • 15 mls olive oil
  • 1 clove garlic finely chopped
  • 1.25 mls dried red chilli
  • 2 courgettes sliced
  • 2 crayfish tails sliced

Instructions

  • Place a large pot of water onto the boil for your pasta
  • When the water has boiled, salt the water generously and add the pasta
  • Add the broccoli for the last 2 minutes of cooking time
  • While the pasta water is heating start on the sauce
  • In a small saucepan, over a medium heat, melt the butter
  • Add the flour and stir for 1 minute to allow the flour to cook
  • Gradually add the stock while whisking
  • Add the parsley and season and leave to simmer and thicken, whisking occasionally
  • Once you have put the pasta in to cook, heat the oil in the largest frying pan you own
  • Add the garlic and the chilli and sauté until the garlic is soft
  • Add the courgettes and the crayfish and season
  • Drain the pasta and the broccoli and add to the frying pan
  • Add the sauce and mix in until the pasta is covered
  • Adjust the seasoning and serve
