Black Bean Salsa Recipe

Ingredients

  • 250 mls whole beans soaked overnight and cooked until al dente or 1 tin of beans
  • 2 ribs celery sliced
  • 1 large carrot sliced
  • ½ red or yellow pepper sliced
  • 1 whole spring onion sliced
  • 1 corn on the cob corn removed
  • Salt and freshly ground black pepper to season
  • 1.25 mls ground cumin
  • Zest of 1 Lemon
  • Juice of ½ lemon
  • Generous handful of fresh coriander roughly chopped

Instructions

  • Combine all of the ingredients in a bowl
  • Add the juice of the other half of the lemon if you need to
  • Adjust the seasoning
  • Serve cold
