"Tuna Green Curry"

Tuna Green Curry


  • 15 mls coconut oil
  • 2 shallots sliced
  • 10 mls green curry paste
  • 2 courgettes sliced
  • 400 mls coconut cream
  • 2 carrots sliced
  • 300 g tuna cut into chunks
  • Salt and freshly ground black pepper to season


  • heat the coconut oil in a pan and sauté the shallots until soft
  • add the curry paste and stir until you can smell the spices developing
  • add the courgettes and cook for 2 minutes
  • add the coconut cream and bring to a simmer
  • add the carrots and leave to simmer until the carrots are soft
  • add the tuna and cook for 5 minutes
  • season to taste and serve with some basmati rice
