Red Pepper and Tomato Sauce

Course: Sauce

Ingredients

  • 15 mls olive oil
  • 1 shallot chopped
  • 2 roma tomatoes chopped
  • 1 red pepper deseeded and chopped
  • 60 mls vegetable stock
  • 15 mls tomato paste
  • 2 garlic cloves crushed

Instructions

  • heat the olive oil in a pan and sauté the shallot until soft
  • add the tomatoes, pepper, vegetable stock, tomato paste and garlic
  • cook until soft and has a nice sauce consistency
