Cranberry and Oat Slices

Author: an original recipe from Lavender and Lime

Ingredients

  • 70 mls lightly toasted coconut slivers
  • 500 mls rolled oats
  • 250 mls brown sugar - I used fructose
  • 500 mls flour
  • 20 mls ground cinnamon
  • 250 mls chopped dried fruit
  • 125 mls dried cranberries
  • 300 g butter
  • 160 mls golden syrup - I used honey
  • 4 eggs lightly whisked

Instructions

  • preheat the oven to 180° Celsius
  • grease a baking sheet
  • mix together the dry ingredients
  • melt the butter and syrup over a low heat
  • add the eggs and mix
  • press the mixture into the baking sheet and bake for 30 minutes
  • leave to cool slightly and cut into squares before storing
