Granola

Course: Breakfast

Ingredients

  • 300 g Rolled oats
  • 75 g Sunflower seeds
  • 170 g mixed raw nuts
  • 20 g wheat germ
  • 15 mls pumpkin seeds
  • 45 g desiccated coconut
  • Zest of one lemon
  • 80 mls canola oil
  • 250 g honey
  • 2.5 mls vanilla extract
  • 75 g chopped dried fruit
  • 90 g raisins
  • 60 g cranberries
  • 1 stick cinnamon

Instructions

  • heat the oven to 180° Celsius
  • place the ingredients up to and including the lemon zest into a bowl and mix
  • in a sauce pan heat the oil and honey
  • when the honey has melted remove from the heat and add the vanilla extract
  • mix into the dry ingredients and place onto a baking tray
  • bake for 40 minutes, turning the mixture over once to prevent burning
  • add the dried fruit, raisins and cranberries
  • place back in the switched off oven for an hour turning the mixture every now and then to prevent burning
  • store in a sealed container with the cinnamon

Notes

I have an LG light oven and do the first baking at 160° Celsius and the drying out at 40° Celsius
