Seared Tuna Served on a Bed of Noodles

Course: Main Course


  • 1 tuna steak
  • 1 star anise
  • 5 mls pink peppercorns
  • 2.5 mls whole cloves
  • 5 mls fennel seeds
  • 2 cm fresh root ginger peeled and finely chopped
  • 15 mls olive oil
  • ramen noodles
  • 15 mls soy sauce


  • in a pestle and mortar grind up the star anise, peppercorns, cloves and fennel
  • add the ginger and the olive oil and mix into a paste
  • coat the tuna with the paste
  • boil the water for the noodles and heat the pan for the tuna
  • put the noodles into the water and after they have been boiling for 2 minutes, sear the tuna for a minute per side
  • drain the noodles, cover with the soya sauce and slice the tuna and place on top
