Microwave Lemon Curd
Easiest curd using just one lemon

Ingredients

fructose

lemon, juice only

butter, cubed
1
egg yolk, lightly beaten
Method
Place the fructose and lemon juice into a bowl and whisk to combine
Add the butter and microwave in 30 second bursts until the butter has melted whisking each time
Whisk in the egg yolk and microwave in 30 second bursts until the curd thickens (mine took 3 minutes)
Transfer straight away to a clean bowl and cover with cling film
Allow to cool before using
Notes
Increase the recipe if you want more curd. Mine made 65g. To make my lemon curd tarts I whipped up 65g cream and folded it into the cooled curd.
