Blueberry Oat Muffins
These muffins are the perfect healthy treat for any lunch box

Ingredients

egg lightly beaten

Method
Preheat the oven to 190° Celsius
Line a muffin tray with silicone / paper cases
Place the oats and milk into a mixing bowl and stir to combine
Sift the flour and baking powder into a mixing bowl
Add the fructose and stir to combine
Place the egg, honey and butter into a mixing bowl and stir to combine
Add the oat mixture and the egg mixture to the flour
Stir to mix until just combined
Divide the batter between the muffin cases
Divide and drop the blueberries into the muffin cases
Bake for 30 minutes and leave to cool in the tin for 5 minutes
Remove from the tin and cool on a wire rack
