Cauliflower Relish
Once overcooked, the taste and texture of cauliflower is totally ruined. This recipe results in the cauliflower being perfectly crunchy.

Ingredients

canola oil

mls
black mustard seeds

mls
ground turmeric
2.5
mls
asafoetida

small
onion, peeled, cut in half and thinly sliced

medium
cauliflower, cut into florets

lemon juice
Salt to season
Method
Place the oil into a large, non stick frying pan
Heat and once hot, add the mustard seeds, turmeric and asafoetida
When the seeds start to pop add the onion
Reduce the temperature and sauté until the onions are soft
Add the cauliflower, increasing the temperature and cook for 5 minutes
Remove from the heat and season with the lemon juice and salt
Serve warm
