Roast Pork

Ingredients

pork belly roast

salt

coriander seeds
Oil for rubbing
Baby potatoes
cut in half

white wine
Method
Pat dry the pork and place on a wire rack for one hour to allow the meat to come up to room temperature
Grind the salt and coriander in a mortar and pestle
Rub some oil onto the pork
Rub in the seasoning
Preheat the oven to 160° Celsius
Cut as many potatoes as you need to cover the bottom of your roasting dish
Place the pork on top of the potatoes
Add the wine and cook for 90 minutes
Allow to rest before carving
