Cauliflower Gratin
This fancy cauliflower cheese makes for a scrumptious side dish

Ingredients

bacon pieces
600
g
whole cauliflower, trimmed and thickly sliced
10
g
salted butter,
plus extra for greasing

g
mature cheddar cheese, grated

mls
cream
salt and freshly ground black pepper to season
Method
Preheat the oven to 150° Celsius
Place the bacon into a dry, non-stick frying pan and heat over a medium temperature
Render the fat, then set aside to cool slightly
Layer half of the cauliflower into a greased, oven proof baking dish and season generously
Top with the bacon and rendered fat then sprinkle over half of the cheese
Top with the rest of the cauliflower and season generously
Pour the cream over the cauliflower then dot the butter over the top
Place into the oven and bake for 50 minutes
Remove from the oven, sprinkle the rest of the cheese on top then place back into the oven
Cook for a further 10 minutes, then remove from the oven
Cover with tin foil and leave to stand for 10 minutes before serving
